Cathy Louder ******************************************************************** ******Candy Making Tips:****** *********************************************************************** STICK TO THE RECIPE The formulas for candy recepies have been perfected to be used in a kitchen similar to your own, and call for quantities easily handled with average household utensils. Don't try to substitute ingredients or double the recipes. CHOOSE THE RIGHT COOKING PAN It should be large enough to let the candy boil freely without running over—heavy enough to eliminate burning—and have a tightly fitted cover to put on during the first few moments of cooking. BE KNOWLEDGEABLE ABOUT HEAT Candies made with milk should be cooked over medium heat to avoid scorching. Candies made with water may be boiled faster. Cooked the syrup too long? Have you ever cooked the candy just a little too long? Here's a hint. Place a piece of bread (light bread or whole grain, doesn't matter) on top of the lump of candy that is too hard to cut. Seal it with plastic wrap and wait. Maybe an hour, maybe a day. Eventually you will find the bread is hard and dry and the candy is just right. It also works with brown sugar. Who knows what else. We make our handmade divinity and caramel candy from tried and true southern recipies. Approved by home economics teachers (that would be my mother) and tested by children of all ages.
